Hey, Rick Uzubell again from Cabaret Design Group, talking today about

"Commercial Bar Design: How to Design a Bar for a Pizza Restaurant," coming up!

Most commercial bar designs have similar equipment, but why do certain venues

require unique bar equipment? The simple answer is: the patrons and tradition.

The fact is, bar equipment requirements vary depending on the amount of beer,

wine and alcohol a given venue sells.

When you think of pizza, you think of beer. This is why pizza restaurants typically sell 60% beer,

20% wine and 20% alcohol, and therefore, will have different bar equipment than

that of fine-dining restaurants, which sell a much higher percentage of liquor

and wine and very little beer. Here's an example of a pizza restaurant bar we

designed for client in Jackson Hole Wyoming. This is markedly different from

other bars we've designed. The major difference is in the amount of alcohol sold.

The most notable changes are as follows: 1). the ice bins are less

sophisticated, so simple ice bins can be used in lieu of larger combination ice

bins (with bottle wells for mixers) -- a savings of $500 per unit,

2). because less alcohol is sold, there is less of a need to display it and in many

instances the back bar can be eliminated in its entirety, which could save up to $5,000 or more,

and 3). the underbar glass washer can be eliminated, since

commercial kitchens have an extensive amount of dishwashing equipment -- this

results in a savings of at least $4,000.

The equipment shown in this bar layout is approximately US$15,000, or about US$7,500 per station

and represents about a 30% savings as compared to an equivalent bar

selling a high percentage of liquor. From a personal perspective, it's always best

to wash the bar glassware in the bar. I believe that this is the only way to

efficiently operate a busy bar. I also believe in displaying liquor, as it's the

most profitable, especially if a craft cocktail menu is instituted. A craft

cocktail menu is a must -- even for pizza restaurants. As I've

written in an earlier post (referenced below) craft cocktails yield the greatest

profit potential for all bar owners, so you don't want to be a non-participant

in that extremely lucrative offering! Lastly, you'll notice the

ergonomic efficiency of this bar layout. With both bartenders moving primarily from side-to-side

and neither has to walk more than two

steps in either direction. Ergonomically designed bartender

stations equate to efficiently-run bars and happier customers, which will

maximize your profits and turn your bar into a cash cow!

Zia, Chef De Cuisine Part 1 - What I do and how much I make - Duration: 5:03.

My name is Zia Sheikh. I am 35 years old.

I am Chef de cuisine at Paowalla Restaurant,

and I make 75,000 a year.

My main responsibility as a chef de cuisine

is to oversee any type of kitchen operation,

from menu development to dishwashing

to working alongside the cooks, to food,

labor costs, sitting down with Chef Floyd

for about 10 to 15 minutes a day.

We talk about what's coming down the line as far as menu.

We are a very highly seasonal restaurant.

We try to use the Union Square Greenmarket

as much as possible, as well as local farms.

If it's not in season, it's not on our menu.

Union Square Greenmarket is where all the local farmers

in the area come together in one area.

We will go over to them, talk to them

about what's in season, taste everything, pick items up,

and then bring it to the restaurant to prep out.

Sometimes things will come in earlier than season,

some things will come in later than season.

For instance, english peas came three weeks out of season,

whereas corn, again, popped out of nowhere,

but right now, we're waiting for heirloom

tomatoes to come into season.

So it's a lot of talking to them,

seeing what they're growing.

And then they are there every two days,

so we try our best to go there again

every two days to keep things fresh.

We bring it back to the restaurant, prep it in the morning,

and then by nighttime it's on our menu

and serving it to the guests.

I do know how to cook everything on the menu,

and I also have to know, just so if anybody

comes to me with a question, it's my job to answer it

and to show them how to do things.

During dinner service, I am the conductor,

I guess you could say.

My main job is to work with all the stations

making sure that they are set up and focused

and ready to go, and then as tickets come in,

I call out different food items to different stations,

and then I'm basically just overseeing

that they're doing their job correctly

to time everything together.

It's a constant learning job.

When you come into it, you have to be ready

to be humiliated.

You're gonna be making a lot of mistakes.

You're gonna be making a lot of mistakes daily.

At the same time, you can't beat yourself up about it.

Eventually down the line, you have to be a good cook,

you have to be a good leader, you have to be a therapist,

you have to be a parent, you have to be a friend.

Just all those things come together

as a restaurant kitchen manager.

As chef de cuisine, and or sous-chef, or even chef owner,

it's all about learning timing of different stations.

We work off a traditional French system.

We have one, what we call an Expediter,

which is basically, you can think of it

as a conductor of an orchestra.

And then we have different stations doing different tasks.

Expediter is in charge of timing all that together.

You have to be able to time your cold station,

your hot line, in this case our bread oven.

Our guests are not waiting too long for food,

and that everything goes out hot in a timely manner

to a point where they'll appreciate it.

Basic math comes into play.

You have to look at cost of ingredients

versus how much items cost per portion,

and then breaking that down for the menu,

factoring in the restaurant costs,

and then serving it to the guests

at a value that they'll appreciate.

The most difficult piece for anybody starting out

is learning the endurance of it.

Most people, when they're starting out,

they don't realize that you're gonna be on your feet

for a very long time, just standing up and working

in high-heat conditions, working with sharp knives.

There's so many things that, what we call

almost disaster areas in the kitchen.

It's a very fast-paced world.

It could be anything from cutting something wrong

to overcooking a steak, undercooking a fish.

There's so many different things that are just

thrown at you and that you have to learn

to let mistakes just roll off your back.

It's not so much that you don't care,

but you have to learn just to kind of keep moving forward.

A lot of the sacrifices you have to make

starting out in this field is knowing how much

of your own time you're giving to this craft.

To be a restaurant chef, you're giving up

on a social life because you work weekends and holidays.

You're giving up on family time, you're giving up

on personal time because eventually, you'll be working

14 hours a day, and it becomes almost natural.

My family still doesn't understand how I work so much,

but it's part of the job, it's what I do.

I have an opportunity to make people smile

without ever meeting them, and to me,

that's a great feeling.

I am constantly feeding my own passion, as far as food goes.

I'm right in the middle of everything,

in terms of, again, just buying produce

and prepping it and cooking it.

The smells of everything in the kitchen

just makes me happy on a daily basis.

I did this just for the love of cooking,

and it's what I want I wanted to do

with the rest of my life.

A lot of people actually nowadays do try to get into it

for the money, and then they realize

that it's a lot of hard work.

It's a lot of repetition, it's a lot of long hours

in the kitchen, it's learning the craft,

and then eventually, you'll get to wherever you need to be.

So I make 75,000 a year.

Every restaurant is budgeted differently.

So as far as what I make and my job title,

it really just depends on what restaurant you go to,

what restaurant group you go to.

It could matter if you're

in a private restaurant versus a hotel.

So there's a lot of different factors that go into

what a chef de cuisine could make.

There are CDCs that make less than me,

there are CDCs that make more than me,

but as far as what this restaurant

is budgeted for, that's what I make here.

Reporting a claim.

No matter what the circumstances, reporting a claim promptly after an accident is always

Congratulations on the birth of your little angel!

Now that you've successfully handled the pressures and difficulties of a nine-month

pregnancy, you can see that you have surely changed in many ways.

On the downside, you skin has perhaps suffered the most.

You may have stretch marks as well as loose skin, which can be quite frustrating to deal

with.

Due to the growing baby inside your womb, the skin around your abdomen stretches a lot.

On top of that, the weight gain during pregnancy contributes to sagging skin around your belly,

waist and upper arms.

It takes time as well as patience to get rid of sagging or loose skin.

Factors like your genes, bone structure and how much weight you gained will determine

how fast you can get back to your prepregnancy body.

There are many simple and effective ways to restore and rejuvenate loose skin after pregnancy,

so you can get back to your pre-baby body faster.

1.

Lose Weight Slowly.

Losing weight is one of the best things you can do for your skin.

But you need to focus on losing weight slowly to give your skin more time to recover and

regain its elasticity.

When you lose your pregnancy weight too fast, it does not give your skin time to recover.

Moreover, losing weight too fast means you will start losing both fat and muscle.

Losing muscle will make the problem of loose skin even worse.

Muscle is needed to maintain a tight, toned body.

Also, losing muscle quickly will lower your metabolism, which undermines your weight loss

efforts.

When it comes to weight loss, your goal should be to lose 1 to 2 pounds per week.

Exercise Regularly.

Your body may be weak after delivery, but you must start exercising as soon as your

body is ready.

There is no need to exert yourself, though.

You can start doing simple exercises like taking walks with your baby around your neighborhood

or some easy yoga poses and squats.

Once your doctor gives the green light regarding your health, you should focus on strength

training.

Opt for exercises that work the tummy directly, such as sit-ups, planks, bicycle crunches

and side bridges.

Along with strength training, cardio exercises will help get rid of the fat under your skin,

leaving it tighter and firmer.

If going to the gym is not possible with a newborn baby to take care of, try to make

time to run, bike, swim or dance to lose fat and make your skin tighter and more beautiful.

Do Daily Oil Massages.

Massage your loose skin daily with some nourishing oil to increase blood circulation.

Good blood circulation promotes firm and smooth skin.

For best results, do the massage just before your bath, then use lukewarm water to bathe.

Plus, regularly massaging with oil will help improve your skin tone and texture by keeping

it well-moisturized.

Apply some warm olive oil or coconut oil on your loose skin.

Using gentle yet firm strokes, massage the oil around on your skin.

Another option is to mix a few drops of peppermint or lavender oil in 2 tablespoons of almond

oil and use this blend to massage your skin to help tighten your skin.

Almond oil is also good for reducing stretch marks.

Follow either of these remedies once or twice daily for several weeks.

Apply Aloe Vera.

Aloe vera has natural skin-tightening properties that can help get rid of loose skin post-delivery.

The malic acid in aloe vera helps improve skin elasticity.

Plus, it is a gentle moisturizer for your skin without making it greasy.

Extract the gel from an aloe vera leaf.

Smear it on the affected skin.

Leave it on for 15 to 20 minutes.

Wash it off with lukewarm water.

Do this once daily.

5.

Use Rose Water.

Once your child is born, you may not have much time to take care of your skin.

One easy trick to tighten your skin is using rose water.

Rose water is a natural astringent, thus it is a great toner and helps tighten loose skin.

Plus, it gives you clear and glowing skin.

Rub some rose water on the affected skin before going to bed.

Another option is to mix 1 cup of rose water with 1 tablespoon each of lemon juice and

almond oil.

Rub it on the loose skin and massage gently.

Do it a few times a week

So the other day we did a video talking about what could be a typical

return on different types of investments and the more investment risk you took

the higher your potential returns. What's probably more important is

how much you could lose so to demonstrate that what I've done is drawn

a chart here that illustrates for different types of assets the worst case

scenario of what you would have lost on the worst year from the year 2000 to now.

The main thing is cash wouldn't have lost anything unless your bank went bust but bonds which

are only just a nudge up at the risk spectrum could have lost potentially

6% if you'd crystallized those losses. Developed market shares so European / UK

shares at one point went down 30% and EM shares - emerging markets - were down

38%. The point is that these all rebounded but you could have lost that

amount if you'd crystallized those losses. So make sure you're in your comfort zone

and you're comfortable with these potential dips and losses and remember

to diversify

How Much Did Mike Pence's Travel to the Colts Game Cost Taxpayers?

Vice President Mike Pence's trip to Indianapolis for the Colts game Sunday may have cost over $200,000, according to various media reports.

Pence arrived at Lucas Oil Stadium on Sunday to watch the Colts play the San Francisco 49ers and tweeted that he was "looking forward" to cheering on his hometown team alongside his wife, Karen.

However, Pence tweeted less than two hours later that he abruptly left the game because several 49ers players took a knee during the national anthem.

He left the game because he didn't want to "dignify any event that disrespects our soldiers, our flag and our national anthem," he tweeted.

About an hour after Pence's exit, President Donald Trump chimed in on Twitter, claiming he spoke to the vice president prior to the game and encouraged him to leave if he saw anyone "disrespecting our country.

Pence's early exit from the game, which some have called a "PR stunt," gained criticism for multiple reasons.

First, as social media users discovered, the photo he tweeted "from" Lucas Oil was actually three years old. He tweeted the same photo from his account when he was the governor of Indiana on November 23, 2014.

Then, many criticized Pence and the Trump administration for using so much money to try and prove a point.

With Trump taking aim at NFL players raising awareness of racial inequalities in our nation by kneeling or sitting during national anthem last month, some saw it as a ploy to expand the divisiveness between the president and the NFL.

However, the White House has since defended the trip, saying that it had been in the works "for several weeks," predating the kneeling controversy.

The White House said that Pence had wanted to go to the Colts game because Peyton Manning was being honored at halftime. So, how much exactly did the trip cost taxpayers?.

First, it's important to note that the White House doesn't disclose the price tag of trips by the president and vice president.

But, according to The Indianapolis Star, public documents show that with staffing included, it costs roughly $16,000 an hour to operate Air Force Two. However, some reports say the cost is somewhere around $33,000/hour.

Pence's office said he was slated to fly back to Washington D.C. after attending an event in Las Vegas on Saturday evening.

Then on Sunday, he was scheduled to fly back to the West Coast from D.C. for a fundraiser in Beverly Hills.

His office claims the trip to Indianapolis and logistics that surrounded it actually saved money because he didn't have to travel back all the way to D. But a report by CNN breaking down the costs of the travel tells a different story.

Assuming the cost to operate Air Force Two is $30,000/hour, Pence's flight from Vegas to Indianapolis on Saturday night took just over three hours, coming in at a cost of around $100,000.

Then, the flight from Indianapolis to Los Angeles on Sunday took nearly five hours, costing about $142,500, CNN reported. Therefore, the grand total of the travel comes at about $242,000 to taxpayers.

Some of those costs will be reimbursed by the Republican National Committee, though, because of the political nature of the events in California he was attending.

"The Vice President was not going to miss the Las Vegas memorial prayer walk on Saturday, which he was honored to attend on behalf of President Trump," a Pence aide told CNN in a statement.

"If the Vice President did not go to Indiana for the Colts game, he would have flown back to D.C. for the evening — which means flying directly over Indiana.

Instead, he made a shorter trip to Indiana for a game that was on his schedule for several weeks.
