latest notifications immediately today I'm gonna share with you Mix vegetable
curry recipe that's extremely easy to make and tastes delicious an excellent
option for a roti chapati or a poori let's see how to make it in a grinder
add about three to four garlic cloves some fresh coconut and some cilantro
grind everything to a fine paste like this add water if needed to make the
paste let's take it out in a bowl
nice and fresh let's keep it on the side
In a kadhai or a pan add 2 to 3 teaspoons of cooking oil and 2 teaspoons of coconut
oil once hot add mustard seeds and as the start to crackle add the cumin seeds
and some hing give this a quick toss to this tempering now add 1 medium onion
finely chopped and fry well
to speed up the process of frying the onions you can add some salt and give it
a mix now add one small potato chopped into
media pieces and give it a mix
turn the flame to medium and cover and cook for 2 to 3 minutes after about 3
minutes let's open give it a quick stir now we'll start adding the other
vegetables here I have some frozen vegetables peas carrots green beans and
some yellow corns one small cauliflower or half of a big cauliflower cut into
small florets give everything a good mix now we are going to cover and cook it on
a medium flame for about 3 to 5 minutes you can always add some additional
vegetables of your choice too like some beetroot or cabbage or mushrooms or even
green red or bell peppers whatever you like now add the freshly made green
paste and start adding these spices 1 TSP of turmeric 1 TSP of store-bought
kitchen King masala 2 teaspoons of red chili powder and some salt give
everything a really good mix make sure all the vegetables are coated with the
green paste and all the spices this will take about 30 to 40 seconds
now cover and cook it for seven to eight minutes on a medium low flame after 8
minutes let's open and check an amazing aroma of all the vegetables green paste
and the spices will start to come from the pan now give it a good mix cover and
cook it for 2 to 3 minutes on a low flame after about 3 minutes let's add
some water I have just washed my grinder and added half a cup of water
one teaspoon of our chili powder to give that nice tangy flavor keep everything a
good mix
I wouldn't cook it for another two to three minutes after adding water let's
open and check after three minutes the curry is almost ready just give it a
quick stir I just gonna let it cook for another minute or so without the lid to
get all that extra water evaporated and make the curry dry it's ready now switch
off the flame and garnish with some coriander leaves let's serve it this mix
vegetables curry goes really well with a roti chapati or a poori or even as a
side item with your Dal (rice) Chawal (lentils) hope you've enjoyed today's recipe please
