I was referring to this piece of pork.
Hello! I am Nicole.
Welcome back to Red Panda Cooking.
Today!
We will be turning this pork belly into...
Chinese Crispy Roasted Pork Belly.
To make this dish more yummylicious,
we will be making three different sauces to go with it.
These sauces are simple to make.
And I will be showing you my favorite way of eating this dish.
We will be roasting two piece of pork belly.
We are going to roast the first piece of pork belly
without poking any holes on the skin.
I never try this before.
So, let's see how it turns out.
For the 2nd piece,
we are going to poke holes on the pork belly skin.
Let's begin.
After washing the pork
its important to pat it dry on both side.
Make sure the skin is dry.
These are the ingredients we will be using to marinate the pork belly.
Rice Wine
White pepper
Five spice.
Sugar and salt.
Measurements for ingredient will be listed in description box.
Don't marinate the skin.
Just marinate the meaty side of the pork belly.
Salt
Sprinkle salt all over the skin.
And spread it out evenly.
After 20 minutes,
the pork will start to sweat.
Pat it dry with kitchen towel.
We are going to make the pork sweat a 2nd time.
Pat the skin dry a 2nd time.
And...
and leave it alone for 90 minutes.
Drying the pork skin,
will make it more crispy when we roast it.
Preheat the oven at 130 degree Celsius for 5 minutes.
Place the pork belly will the skin facing upwards.
We are going to roast.
Roast.
the pork belly at 130 degree Celsius,
for 1 hour.
1 hour later.
Nicole. How come like that?
Will it burst?
There is a chance it might burst.
Turn up the temperature to 150 degree Celsius,
and roast for another 15 minutes.
15 minutes later.
Flip the pork belly over.
Roast it at 150 degree Celsius,
for 30 minutes.
In the meantime, we are going to prepare the
3 different sauces to go with the pork belly.
White pepper, sugar, salt.
Mix well.
The ratio of the pepper, salt and sugar mixture is up to you.
And now we are going to make the 2nd sauce.
When the oils is hot enough,
add the garlic.
For today, just stir fry for 30 seconds.
because we want some of the raw garlic taste.
Add the ginger and cook for just 15 seconds.
Add the sugar,
salt,
mirin,
and chicken stock.
Cook for about 1 minute.
Turn off the fire,
before adding the Chinese parsley.
Give it a stir, and the 2nd sauce is done.
Ginger Sauce.

There is so much more garlic and Chinese parsley.
Why is it call ginger sauce?
There may be lesser ginger,
but then the taste of the ginger will be
stronger than the garlic and Chinese parsley.

I am not using the whole pear.
Cut the pear into small pieces.
Submerge the pear in water.
Add sugar,
and salt to taste.
Heat the pan on medium heat until it start to simmer.
Then turn the fire to small,
and cook for 20 minutes.
Or until the pear is quite soft.
Turn off the fire.
And add the vinegar,
and mirin.
Don't over bend,
or it will turn to pear juice.
Pour the pear sauce back into the pan.
Cook the sauce on small fire for about 5 minutes,
or until the sauce become nice and thick.
Pear Sauce.
The roasted pork belly taste great with any of the 3 sauces.
My favorite is the pear sauce.
Yeah the pear sauce is good.
My lettuce taste better than any of the 3 sauces.
Flip the pork pork belly over again.
Cook at 150 degree Celsius for 5 mins.
We didn't poke any holes for this pork belly skin.
I think it still turn out pretty good.

Getting rid of the burn part.
Now we are going to roast the 2nd piece of pork belly.
The one which we poke holes on the skin.
The steps are all the same,
but for this smaller piece of pork belly,
the timing is slightly shorter.
Ok...
So this time there are no big bumps on the skin.
It smells so good.
And look at how tender and juicy that is.
Both skin taste just as crispy and tasty to me.
Now i am going to share with you guys,
my favorite way of eating this roasted pork belly.
Minced garlic
Chinese parsley
Bring the chicken stock to a rapid boil.
This cooking technique will
infuse the flavor of the roasted pork belly into the chicken stock.
It's also a great way of reheating the pork belly,
without overcooking it.

hi guys it's Nicola here from idd osteopaths I don't know about you but
I've noticed a distinct change in the weather and the past week or so it's
really starting to feel quite autumnal and cold doesn't that particularly in
the mornings and you think it's getting really quite shitty up intentions have
put my heating on a few times I don't know about you so what does that mean
one way of going out about more exercising so it means that you really
need to be spending a little bit of time warming up before you exercise whether
that be that you're going out to play football or rugby or whether it be that
you're just going to walk the dog or you're going to walk the children to
school you do need to be thinking about doing a little bit of warm up when the
weather is colder because it reduces the blood supply particularly to our
extremities to our hands wrists feets and angles so I'm going to go through
today with you is a really really quick and easy way to warm up our carbs and
our Achilles tendon so traditionally people would normally just do a kind of
standing calf stretch against the wall that's not really good enough so I'm
going to show you a much better way of warming up that area so you're going to
need a stable surface like a table to lean against I'm gonna place my hands
there and my feet behind me and what you're gonna do is you're going to pump
the heels to the floor and then bend the knees as if we're almost on our a
bicycle we're cycling uphill and do that really really quickly to really get the
circulation going into the cars and into the feet you're then going to push down
to about half time so we're gonna do about five of these so I'm going half
the speed and I'm pushing the heel all the way down to the floor and starting
to feel a bit of a stretch the really the back of the Achilles and then I'm
going to leave my heel on the floor and come forward into a nice big stretch and
then I'm gonna switch sides it's a really really quick and easy active
warm-up for your feet and for your ankles your calves your Achilles tendon
